Apple and walnut amaretti crumbles
8 large apples
3 tbsp castor sugar
½ cup toasted walnuts nuts, coarsely chopped
thick cream, to serve
Topping
½ cup ground almonds
100g butter, chopped
½ cup self raising flour
1/2 cup brown sugar
40g amaretti biscuits, crushed
Pre-heat oven to 200C
Peel, core and slice apples. Place in a saucepan with ¾ cup water and castor sugar and cook over medium heat for about 10 minutes or until tender. Remove from heat, add walnuts and stir to combine.
For topping, place ground almonds, butter, flour and brown sugar in a bowl. Using your fingertips rub butter into mixture until it resembles coarse breadcrumbs. Add biscuits and mix until just combined.
Divide apple mixture evenly between 6 x 300ml ovenproof dishes and top with crumble mixture. Place dishes on an oven tray and bake for 20-25 minutes until crumble is golden.
Serve with thick cream.
