Choc chip and pistachio muffins

 

2 cups self raising flour

1/2 cup caster sugar

1 cup milk

1/3 cup vegetable oil

2 eggs

2/3 cup choc chips

1/2 cup chopped pistachio nuts

 

Pre-heat oven to 200C.

Combine flour and sugar in a large bowl. Combine milk, oil and eggs in a separate bowl and whisk lightly, then stir in chocolate chips. Make a well in the centre of the flour mixture, pour in liquid and mix lightly. Spoon batter into 6 greased muffin tins (1/2 cup capacity) until 2/3 full then scatter tops with nuts. Bake for 20-25 minutes or until golden and cooked.

Turn onto a wire rack to cool. Makes  6.
