Cumin Crusted Blue Eye Travalla & Caesar Salad

Serves 4

500g Blue Eye Travalla fillets
1 tablespoon cumin powder mixed with salt and pepper to taste
Spray oil

For the dressing:-

1 egg yolk
1 tablespoon lemon juice
2/3 cup light olive oil
2 tablespoons hot water
1 teaspoon garlic crushed

1 pkt Caesar Salad
Ground black pepper

Sprinkle the cumin mixture on both sides of the fillets and spray with spray oil and cook on both sides on a medium hot pan until down. Lift from pan and cool.

Meantime, whisk the egg yolk and lemon juice until light in colour; slowly whisk in the oil and when completely combined, whisk in the water and garlic.

Tip the lettuce into a salad bowl and dress with as much dressing as you like (any left over will store for 4 days in the refrigerator).

Toss the salad; break the fish into pieces and spread over dressed salad. Grind on pepper and serve. Or you can serve the fish as a whole cooked fillet sitting besides the plated salad

NOTE    

There is another step to this recipe to show of the spray oil if you like and that is to make the crouton for the salad...have some bread already cut into crouton size – spray with oil and either pan fry or do in oven.
