Easy Meatloaf
This meatloaf is very tasty served cold the following day and delicious in sandwiches.
500g lean beef mince
250g sausage mince
1 brown onion, peeled and finely chopped
1 small carrot, peeled and grated
2 rashers bacon, chopped
1/3 cup packaged breadcrumbs
1 egg, lightly beaten,
1 tbsp chopped parsley
1 ½ tbsp Worcestershire sauce
1 ½ tbsp tomato sauce
salt and pepper
Pre-heat oven to 180C.
Combine beef and sausage mince, onion and carrot in a large mixing bowl and stir well. Add remaining ingredients and stir until well combined. Spoon mixture into a greased loaf pan (11x21cm.) and press with the back of a spoon to even top. Cover with foil and bake for 45 minutes. Remove foil and bake for a further 40-45 minutes until cooked through. (Mixture will shrink slightly from the sides of the pan when meatloaf is cooked).
Pour off any excess fat and stand for 10 minutes before serving.
