Lime Meringue Pie by Lynne Mullins

 
250g plain sweet biscuits

2 tablespoons desiccated coconut

125g butter, melted

395g can condensed milk

3 eggs, separated

2 teaspoons grated lime rind

½ cup lime juice (about 3)

1 teaspoon vanilla extract

½ cup caster sugar

Pre-heat oven to 180C.

Combine biscuits and coconut in a food processor and process until mixture forms crumbs. Remove to a bowl and add melted butter. Mix well and press biscuit mixture into the base and sides of a 23cm. flan tin. Refrigerate until firm. Combine condensed milk, egg yolks, lime rind and juice, and vanilla in a bowl and stir well. Pour into prepared base. Whisk egg whites until soft peaks form. Gradually add sugar and beat until sugar has dissolved. Spoon meringue over filling. Bake for 15-20 minutes until meringue is golden.

Serves 8.
