Lynne Mullins' Seed Cake recipe
LYNNE MULLINS' SEED CAKE
1 cup caster sugar
200g butter, softened
2 eggs
1 ½ cups self-raising flour
½ cup milk
1 teaspoon vanilla extract
1 ½ -2 tbsp caraway seeds
Pre-heat oven to 180C.
Combine all ingredients in the bowl of an electric mixer, (except the caraway seeds) and beat on low speed until ingredients are combined then beat on medium speed for about 3 minutes until thick and pale. Fold in caraway seeds.
Spoon mixture into a base lined and greased 20cm.round cake tin. Bake for 40-50 minutes or until a cake skewer comes out clean. Stand in pan for 5 minutes before turning onto a cake rack to cool.
