Spiced Apple turnovers
2 medium apples (about 180g ea)
1 tbsp butter
1/3 cup firmly packed brown sugar
1 tbsp lemon juice
¼ tsp ground cardamom
1/4 tsp ground cinnamon
pinch allspice
2 sheets ready rolled puff pastry
1 egg, lightly beaten
1 tbsp icing sugar
thick cream, to serve
Pre-heat oven to 200C.
Peel, core and slice apples. Melt butter in a frying pan over medium heat and cook apples with brown sugar and lemon juice, stirring occasionally until sugar is dissolved. Stir in spices , remove from heat and cool.
Cut two rounds from each pastry sheet. Place a quarter of the apple mixture on each pastry round, brush around the edges with egg . Fold pastry over to enclose filling, pinching edges together to seal. Place turnovers on a lightly greased oven tray and brush tops with egg.
Bake for about 15-18 minutes or until golden and pastry is cooked. Dust with icing sugar and serve with thick cream.
