Tuna Mac and Cheese

Tuna Mac and Cheese – Serves 2
30g butter
1 tablespoon plain flour
1 cup low fat milk
¼ cup grated carrot
¼ cup grated zucchini
¼ cup corn kernels
1 cup cooked macaroni
½ cup grated light cheddar cheese
1 x 100g tins 97% fat free tuna

1) Heat the butter in a pan over medium heat, add the flour and cook, stirring for 1 minute.
2) Remove the pan from the heat and stir in the milk.  Return to the heat and cook, stirring, until the sauce boils and thickens.
3) Add the vegetables, tuna and macaroni and cook for 5 minutes or until the vegetables are soft.  Stir in the cheese and cook until it has melted.
